- Separate the eggs. Beat the butter with the sugar and vanilla sugar. Gradually add the yolks and lemon juice.
- Wash and pit the cherries.
- Beat the egg whites until stiff.
- Fold a third of the egg white and flour into the butter mixture.
- Sift the baking powder into the rest of the flour.
- Fold in the rest of the flour and egg whites until the mixture is homogeneous. Do not overmix.
- Spread the mixture evenly on a baking tray and sprinkle with the pitted cherries.
- Bake at 180 degrees for 30-35 minutes until golden-brown. Leave to cool for at least 15 minutes.
